
Beets are good for you and are surprisingly tasty. Sure, many of you have probably eaten canned and/or pickled beets, so you have some sort of grudge against my favorite root vegetable. A fresh beet is nothing like what happens when it is canned. A fresh beet is earthy and crisp, summery and slightly sweet.
For this cocktail you’ll need to gather the following:
- Beet Juice (you can also use a blend like orange-beet)
- Ice
- Gin (I used Belle of Dayton)
- Lemon
- A sprig of fresh rosemary
- Honey (optional)
- A cheap, dry sparkling white wine (really, don’t splurge on this part)

Throw some ice in your trusty cocktail shaker with a shot of gin and the beet juice (I filled my shaker about ½ with beet juice). If you’re using straight beet juice, go ahead and add a tablespoon of honey. If you’re using an orange-beet blend, you can forego the honey. Cut and juice a wedge of lemon and throw it in there too. Shake it like a polaroid picture for 30 seconds and strain into a coupe or martini glass. Fill the glass about ⅔ full and them top off with the sparkling white wine. Garnish with the rosemary.
Plus, beet juice is used to keep ice off of roads in the winter.
